TOP TIP: Studies have shown that eating nitrate rich foods like beetroot and leafy greens like rocket can improve brain function, reduce blood pressure and improve exercise intensity and duration by increased nitric oxide production which helps dilates blood vessels (a good thing). Beetroot and leafy greens may also help change the structure of the brain which becomes more rigid as we age. The neuroplasticity of the brain can improve with learning new skills like dancing as well as with aerobic exercise and by eating nitrate rich foods.Beetroot is rich in minerals and vitamins with 100g providing 27% daily requirement of folate and nearly 3 g of fibre. I just love the huge variety of plant foods I have discovered just switching from vegetarian to vegan over the last several years.

Notes
Top Tip: Start all main meals with a salad (even if it just a handful of dark green leaves and some beetroot or cherry tomatoes). Make salad a main meal especially in the summer and make it colourful and big and fresh. If you are going to be a couch potato (I love potatoes) then eat your salad but a good idea to be active as well to stave off what most people dread - Dementia.
