Whip the soya yoghurt to a smooth consistency with the soya milk and mint sauce.
Add the sweet corn or grated cucumber and a pinch of salt if you wish.
TOP TIP: Sweet corn is a complex starchy carbohydrate that allows regulation of our blood sugars slowly and is full of fibre.TOP TIP: Soya Minimally processed or whole soya is a great addition to our diet for all ages, especially in the menopause as it is rich in phytoestrogens helping to reduce hot flushes. Relatively unprocessed soya products are better such as edamame beans, mature soya beans, tofu, tempeh, soya curls, miso and natto over soya sausages, fake meats and soya chunks which are best reserved for occasional treats (see leaflet Soya in my fact sheets).
